Oatmeal Chewy bars without nuts

Ingredients

  • 1 3/4 cups of Organic Quick Oat Flakes
  • 1 cup (250 mL) grated unsweetened coconut
  • 180 ml (¾ cup) puffed rice cereal
  • 180 ml (¾ cup) puffed rice cereal
  • 30 ml (2 tablespoons) chia seeds
  • 1.25 ml (1/4 teaspoon) of cinnamon
  • 80 ml (1/3 cup) of golden corn syrup
  • 80 ml (1/3 cup) of coconut oil
  • 30 ml (2 tablespoons) of honey
  • 2.5 ml (½ teaspoon) vanilla extract
  • 125 ml (½ cup) chocolate mini-chips

Preparation

  1. In a bowl, combine the oatmeal with the coconut, the puffed rice cereals, the chia seeds and the cinnamon.
  2. In a saucepan, bring the corn syrup to boil with the coconut oil, honey and vanilla.
  3. Pour the syrup mixture into the bowl and stir.
  4. Line a 20 cm (8 in) square baking pan with parchment paper and spread out the mixture. Equalize the surface by pressing. Sprinkle with mini chocolate chips and squeeze lightly.
  5. Cover the dish with plastic wrap. Refrigerate from 4 to 5 hours.
  6. Remove from the pan and cut into 16 bars. These bars are kept cool.
