Dried tomatoes, bacon and cheese muffins

Ingredients

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 1 cup of grated cheese (Emmenthal or Gouda or cheddar, anything is possible)

  • 1 beaten eggs

  • 1/2 cup of cold melted butter

  • 1/4 cup of maple syrup

  • 1 cup of milk

  • 6 slices of crumble cooked bacon

  • 6 dried tomatoes cut into small pieces

The recipe

  • With the rack in the middle position, preheat the oven to 400 ° F (205 ° C).

  • In a bowl, mix the flour, baking powder and salt together. Add the cheese, bacon and dried tomatoes.

  • Add the liquid ingredients. Mix the dry ingredients as little as possible with the liquid ingredients, only to moisten the dry ingredients.

  • Divide the batter between the muffin cups.

  • Bake for about 20 minutes or until a toothpick inserted in the centre of the cake comes out clean.
