Ingredients
2 cups of
Organic Whole Corn Flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1 cup of grated cheese (Emmenthal or Gouda or cheddar, anything is possible)
1 beaten eggs
1/2 cup of cold melted butter
1/4 cup of maple syrup
1 cup of milk
6 slices of crumble cooked bacon
6 dried tomatoes cut into small pieces
Preparation
With the rack in the middle position, preheat the oven to 400 ° F (205 ° C).
In a bowl, mix the flour, baking powder and salt together. Add the cheese, bacon and dried tomatoes.
Add the liquid ingredients. Mix the dry ingredients as little as possible with the liquid ingredients, only to moisten the dry ingredients.
Divide the batter between the muffin cups.
Bake for about 20 minutes or until a toothpick inserted in the centre of the cake comes out clean.
