In a saucepan, heat a little olive oil over medium heat. Cook the ginger and onion for 2 to 3 minutes while stirring.
Add 500 mL (2 cups) water, soy sauce, lentils, diced peppers and brown sugar. Bring to a boil, then cover and simmer over low heat for 8 to 10 minutes, until the liquid is almost completely absorbed. Season with salt and pepper.
