Heat oven to 400°F. Roast 1 sweet potato ( peeled and diced) for 50 minutes. Once roasted, measure1/2 cup and remove any hard skin off the potatoes.
Taking a tiny bowl, make the chia-egg ( chia +water) stir and set aside for 5 minutes. In a medium size bowl, mix all the ingredients together. Once the chia is in a gel form add it to the mixture and stir.
Heat oven at 350°F. Pour the batter evenly into muffin tin making 8 muffins. Cook for 18-20 minutes. They are better lightly undercooked.
