Heat oven to 400° (200°C). Roast 1 sweet potato (peeled and diced) for 50 minutes. Once roasted, measure1/2 cup (125 ml) and remove any hard skin off the potatoes.
Taking a tiny bowl, make the chia-egg (chia +water) stir and set aside for 5 minutes. In a medium-size bowl, mix all the ingredients together. Once the chia is in a gel form, add it to the mixture and stir.
Heat oven at 350°F (180°C). Pour the batter evenly into muffin tin making 8 muffins. Cook for 18-20 minutes. They are better lightly undercooked.
