Ingredients

  • 1/2 cup (125 ml) Organic Whole Oat Flour
  • 1 tablespoon (15 ml) chia seeds
  • 2 1/2 tablespoons (22.5 ml) water
  • 3 bananas
  • 1/3 cup (85 ml) almond butter
  • 2 tablespoons (30 ml) melted coconut oil
  • 2 tablespoons (30 ml) plant based milk
  • 46 g chocolate protein powder
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) baking powder
  • 2 teaspoons (10 ml) cinnamon
  • 1 teaspoon (5 ml) salt
  • 1/4 cup (60 ml) chocolate chips

Preparation

  1. Heat oven to 400° (200°C). Roast 1 sweet potato (peeled and diced) for 50 minutes. Once roasted, measure1/2 cup (125 ml) and remove any hard skin off the potatoes.
  2. Taking a tiny bowl, make the chia-egg (chia +water) stir and set aside for 5 minutes. In a medium-size bowl, mix all the ingredients together. Once the chia is in a gel form, add it to the mixture and stir.
  3. Heat oven at 350°F (180°C). Pour the batter evenly into muffin tin making 8 muffins. Cook for 18-20 minutes. They are better lightly undercooked.
