Ingredients

  • 1 cup (250 ml) Organic White Quinoa
  • 2 tomatoes
  • 2 green onions
  • 1/2 cup (125 ml) fresh mint
  • 1 cup (250 ml) fresh parsley
  • Juice of a lemon
  • 1/2 cup (125 ml) feta cheese
  • Salt and pepper

Preparation

  1. Cook the quinoa according to the instructions on the package.
  2. Finely chop the tomatoes, shallots, feta cheese, and fresh herbs. Mix with the quinoa, add the lemon juice, and season with salt and pepper, to taste.
