  • 1 1/2 cups of Organic Barley Flakes
  • 1/2 of Organic Whole Oat Flour
  • 1/2 of Organic Pumpkin Seeds
  • 1/2 cup of hemp seeds
  • 1/2 cup dried dates, coarsely chopped
  • 3 teaspoons of chai spice (see below)
  • 1/4 teaspoon of salt


  • 2 teaspoons of cinnamon
  • 2 teaspoons of ginger
  • 1 teaspoon of all spice
  • 1/2 teaspoon of cardamom
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of clove



  • 1 can of white beans, rinsed and drained
  • 3/4 cup of unsweetened apple compote
  • 3/4 cup of natural peanut butter
  • 1/2 cup of maple syrup
  • 1 tablespoon of vanilla


  1. Place the rack in the center of the oven and preheat to 350 ° F. Grease the contours of a 9 "square baking pan and cover the bottom with parchment paper.
  2. In a small bowl, combine all the spices. Mix well to remove lumps. Set aside.
  3. In a large bowl, combine all the ingredients in the dry mix. Set aside.
  4. In a food processor, smooth all ingredients of the wet mixture. Add the dry ingredients in one go, and then pulse a few times just to combine.
  5. Pour the mixture into the pan, level the surface well with a spatula, garnish with some pumpkin seeds and cook for 25-30 minutes in the oven.
  6. Let it cool for 5 minutes before unmolding and transfer to a rack. Cool completely. Cut into 16 bars, then store in an airtight container.
