Traditional panettone usually takes three days to prepare; this muffin version of panettone allows you to enjoy its taste and the pleasure of baking it in just one hour.
1/4 cup (60 ml) apple juice, orange juice or rum, or a mix of these ingredients
4 tablespoons (60 ml) butter (room temperature)
2 tablespoons (30 ml) egetable oil
2 eggs
1/4 teaspoon (1.25 ml) lemon or orange extract
1 teaspoon (5 ml) vanilla extract
2 teaspoons (10 ml) baking powder
1/4 teaspoon (1.25 ml) salt
2/3 cup (170 ml) milk
2 tablespoons (30 ml) maple flakes
Preparation
Mix the candied fruits with the chosen liquid in a bowl, heat in the microwave until very hot, and let stand for 1 hour.
Preheat the oven to 375°F (190°C). Grease a muffin tin. In a bowl, whisk the butter, sugar, and vegetable oil until the mixture is fluffy. Add the eggs.
Add the orange extract, vanilla, baking powder, and salt to the mixture. Alternately incorporate the flour and milk, ending with the flour. Mix until thoroughly homogeneous. Finish by adding the candied fruits and the liquid.
Divide the mixture among the cups, filling them completely. Sprinkle the maple sugar flakes on top.
Bake the muffins for 18 to 20 minutes, or until golden brown on top or a toothpick inserted in the middle comes out clean.
Remove from the oven, and as soon as the muffins are cool enough to handle, remove them from the pan and let them cool on a wire rack.
