Oatmeal chewy bars without nuts

Ingredients

  • 1 3/4 cup (430 ml) Organic Quick Oat Flakes
  • 1 cup (250 ml) grated unsweetened coconut
  • 3/4 cup (180 ml) puffed rice cereal
  • 2 tablespoons (30 ml) chia seeds
  • 1/4 teaspoon (1.25 ml) cinnamon
  • 1/3 cup (80 ml) golden corn syrup
  • 1/3 cup (80 ml) coconut oil
  • 2 tablespoons (30 ml) honey
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/2 cup (125 ml) mini chocolate chips

Preparation

  1. In a bowl, combine the oatmeal with the coconut, puffed rice cereal, chia seeds and cinnamon.
  2. In a saucepan, ring the corn syrup, coconut oil, honey, and vanilla to a boil.
  3. Pour the syrup mixture into the bowl and stir.
  4. Line a 8 inches (20 cm) square baking pan with parchment paper and spread out the mixture. Press down to even out the surface. Sprinkle with mini chocolate chips and press down lightly.
  5. Cover the dish with a plastic wrap. Refrigerate from 4 to 5 hours.
  6. Remove them from the pan and cut them into 16 bars. Store these bars in a cool place.
