In a bowl, combine the oatmeal with the coconut, puffed rice cereal, chia seeds and cinnamon.
In a saucepan, ring the corn syrup, coconut oil, honey, and vanilla to a boil.
Pour the syrup mixture into the bowl and stir.
Line a 8 inches (20 cm) square baking pan with parchment paper and spread out the mixture. Press down to even out the surface. Sprinkle with mini chocolate chips and press down lightly.
Cover the dish with a plastic wrap. Refrigerate from 4 to 5 hours.
Remove them from the pan and cut them into 16 bars. Store these bars in a cool place.
