Homemade granola

  1. Place the rack in the middle of the oven, and preheat the oven to 300°F (150°C).
  2. In a large bowl, mix together the oat flakes, pumpkin seeds and sunflower seeds. In a clean coffee grinder, finely grind the flax seeds and add them to the mixture. Add the honey to the oats and seeds, then mix well with a wooden spoon. Slowly add the cinnamon and mix well again.
  3. Spread the mixture on a baking sheet. Bake 3 times for 10 to 15 minutes. After each 10 to 15 minutes, remove the granola and mix well before returning it to the oven to prevent it from burning.
  4. After baking, let the granola cool completely, then add the remaining ingredients. NOTE: Cranberries, coconut, and chocolate don't go in the oven; they're added to the granola mixture after baking!
  5. Enjoy with yogurt, in a smoothie, or with milk!
