Dried tomatoes, bacon and cheese muffins

  • To vary this recipe, you can also use the Organic Tipo ʺ00ʺ Pizza Flour.

Ingredients

  • 2 cups (500 ml) Organic Whole Corn Flour
  • 2 teaspoons (10 ml) baking powder
  • 1/2 teaspoon (2.5 ml) salt
  • 1 cup (250 ml) grated cheese (Emmenthal or Gouda or cheddar, etc.)
  • 1 beaten egg
  • 1/2 cup (125 ml) cold melted butter
  • 1/4 cup (60 ml) maple syrup
  • 1 cup (250 ml) milk
  • 6 slices of crumble cooked bacon
  • 6 dried tomatoes cut into small pieces

Preparation

  1. Position the rack in the middle of the oven, preheat the oven to 400°F (205 °C).
  2. In a bowl, mix the flour, baking powder and salt. Add the cheese, bacon and dried tomatoes.
  3. Add the liquid ingredients. Mix the dry ingredients as little as possible with the liquid ingredients, only to moisten the dry ingredients.
  4. Divide the batter between the muffin cups.
  5. Bake for about 20 minutes or until a toothpick inserted in the centre of the muffin comes out clean.
