1/2 cup Organic unbleached white all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup unsalted butter, melted
1/2 cup brown sugar
1 egg yolk
1 teaspoon vanilla extract
115 grams dark or semi-sweet chocolate chips
Brownie
115 grams dark or semi-sweet chocolate chips
1/4 cup unsalted butter, cut into cubes
1/3 cup brown sugar
1 egg
1/3 cup Organic unbleached white all-purpose flour
Preparation

Place the rack in the center of the oven. Preheat the oven to 190°C (375°F). Generously butter 18 muffin cups.
In a bowl, combine the flour with the baking soda and salt.
In another bowl, whisk together the melted butter and brown sugar. Add the egg yolk and vanilla, then whisk vigorously for 1 minute. Using a spatula, fold in the flour mixture, then add the chocolate. Spread the dough, about 20 ml (4 teaspoons) per cavity, pressing lightly, without completely covering the bottom. Set aside.
Brownies
In a bowl, melt the chocolate and butter in the microwave for 45 seconds. Stir until chocolate is completely melted.
Whisk in brown sugar and egg. Using a spatula, fold in the flour.
Spread brownies dough over cookie dough, about 15 mL (1 tablespoon) per cavity. Using a toothpick, mix the 2 preparations.
Bake in the oven for 8 minutes. Let cool on a rack for 15 minutes. Unmold. Let cool completely on the rack for 2 hours.
