Buckwheat Date Squares

Ingredients

DATES:

  • 2 1/2 cups (625 ml) Medjool dates, pitted and chopped
  • 1/2 cup (125 ml) water
  • 2 teaspoons (10 ml)  lemon juice
  • 1 teaspoon (5 ml) baking soda

Preparation

 

  1. Place all ingredients and dates in a saucepan and simmer for 5 minutes, or until dates are reduced to a purée. Allow time to cool.
  2. Place the rack in the center of the oven. Preheat the oven to 350°F (180°C). Line a baking dish with parchment paper.
  3. Combine all the dry ingredients, moisten with melted butter, and mix well.
  4. Spread half of the flake mixture in the bottom of the pan, pressing down firmly.
  5. Add the dates, then top with the remaining flake mixture.
  6. Bake for about 50 to 60 minutes, or until the date squares are lightly browned.
  7. Let cool on a wire rack. Cut into squares and serve!
