Position the rack into the middle of the oven and preheat the oven to 350°F (180°C). Grease the sides of a 9-inch square pan and line the bottom with parchment paper.
In a small bowl, combine all the spices. Mix well to remove any lumps. Set aside.
In a large bowl, combine all the dry ingredients. Set aside.
In a food processor, purée all the wet ingredients until they're homogeneous. Add the dry ingredients all at once, then pulse a few times to just mix them in.
Pour the mixture into the lined pan, smooth the surface with a spatula, sprinkle with a few pumpkin seeds, then bake for 25 to 30 minutes.
Remove from the oven and let cool for 5 minutes before unmolding and transferring to a wire rack. Let cool completely. Cut into 16 bars, then store in an hermetically sealed container.
