Ingredients

CHAI SPICES:

  • 2 teaspoons (10 ml) cinnamon
  • 2 teaspoons (10 ml) ginger
  • 1 teaspoon (5 ml) all spice
  • 1/2 teaspoon (2.5 ml) cardamom
  • 1/4 teaspoon (1.25 ml) nutmeg
  • 1/4 teaspoon (1.25 ml) clove

 

DRY MIX:

  • 1 can of white beans, rinsed and drained
  • 3/4 cup (180 ml) unsweetened apple sauce
  • 3/4 cup 9180 ml) natural peanut butter
  • 1/2 cup (125 ml) maple syrup
  • 1 tablespoon (15 ml) vanilla

Preparation

  1. Position the rack into the middle of the oven and preheat the oven to 350°F (180°C). Grease the sides of a 9-inch square pan and line the bottom with parchment paper.
  2. In a small bowl, combine all the spices. Mix well to remove any lumps. Set aside.
  3. In a large bowl, combine all the dry ingredients. Set aside.
  4. In a food processor, purée all the wet ingredients until they're homogeneous. Add the dry ingredients all at once, then pulse a few times to just mix them in.
  5. Pour the mixture into the lined pan, smooth the surface with a spatula, sprinkle with a few pumpkin seeds, then bake for 25 to 30 minutes.
  6. Remove from the oven and let cool for 5 minutes before unmolding and transferring to a wire rack. Let cool completely. Cut into 16 bars, then store in an hermetically sealed container.
