Olympic chocolate muffins

Chocolate Chip Muffins with a Gooey Center

Notes:

Delicious, soft, and satisfying, this muffin recipe has gained popularity due to athletes' enthusiasm during the 2024 Olympic Games.

Ingredients

  • 200 g or approximately 1 1/2 cups of La Milanaise unbleached pastry flour,
  • 50 g or 1/2 cup of unsweetened cocoa powder,
    1 1/2 teaspoons of baking powder,
  • 150 g or 3/4 cup of La Milanaise organic blonde cane sugar,
  • 2 eggs,
  • 100 g or 1/2 cup of melted butter,
  • 150 ml of milk,
  • 100 g or 3/4 cup of chocolate chips,
  • 12 squares of dark chocolate,
  • 1 pinch of salt,
  • 1 teaspoon of vanilla extract."

Preparation

  1. Preheat your oven to 355°F. Prepare a muffin tin by either greasing it or lining it with paper cups.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, and a pinch of salt. Add the sugar and mix well.
  3. In another bowl, beat the eggs with the melted butter, milk, and vanilla extract.
  4. Incorporate this mixture into the dry ingredients until you get a smooth batter.
  5. Gently fold the chocolate chips into the batter.
  6. Fill each muffin cup halfway with the batter.
  7. Place a square of dark chocolate in the center of each muffin, then cover with the remaining batter.
  8. Bake the muffins for 15 to 20 minutes, until they are well-risen and slightly firm. Let them cool for a few minutes before removing from the tin.
