Olympic chocolate muffins

Chocolate chip muffins with a gooey center

Notes:

This muffin recipe has gained popularity due to its delicious, soft, and satisfying taste, as well as the enthusiasm of athletes during the 2024 Olympic Games.

Ingredients

  • 200 g or approximately 1 1/2 cup (375 ml)Organic Unbleached White Pastry Flour
  • 50 g or 1/2 cup (125 ml) unsweetened cocoa powder
    1 1/2 teaspoon (7.5 ml) baking powder,
  • 150 g or 3/4 cup (180 ml) Organic Golden Cane Sugar
  • 2 eggs
  • 100 g or 1/2 cup (125 ml) melted butter
  • 150 ml milk
  • 100 g or 3/4 cup (180 ml) chocolate chips
  • 12 squares of dark chocolate
  • 1 pinch of salt
  • 1 teaspoon (5 ml) vanilla extract

Preparation

  1. Preheat your oven to 355°F (185°C). Prepare a muffin tin by either greasing it or lining it with paper cups.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, and a pinch of salt. Add the sugar and mix well.
  3. In another bowl, beat the eggs with the melted butter, milk, and vanilla extract.
  4. Incorporate this mixture into the dry ingredients until you get a smooth batter.
  5. Gently fold the chocolate chips into the batter.
  6. Fill each muffin cup halfway with the batter.
  7. Place a square of dark chocolate in the center of each muffin, then cover with the remaining batter.
  8. Bake the muffins for 15 to 20 minutes, until they are well-risen and slightly firm. Let them cool for a few minutes before removing from the tin.
