Preheat the oven to 400°F (200°C). Combine oatmeal, white pastry flour and salt. Incorporate the butter by cutting it into small pieces. Drizzle with the ice-cold water. Mix lightly with a fork. As the dough begins to stick together, use just enough water to make a dough that holds together and comes off the bowl easily. Roll on a pie plate.
Dissolve the cornstarch in the water. Bring the maple syrup and water to a boil, and boil for 5 minutes, stirring frequently, until the mixture is smooth and clear.
Add the butter and the chopped pecans. Let cool and bake between 2 pie crusts for 25-30 minutes.
