Mango mojito

Ingredients

  • 2-4 tablespoons (30-60 ml) Organic Golden Cane Sugar
  • 1/2 mango (fresh or frozen, diced)
  • Sparkling water (approx. 3/4 cup/160 ml for the alcoholic version, 1 1/4 cup/320 ml for a virgin mojito)
  • 1 lime (juice)
  • 4 oz. (120 ml) white rum
  • Ice cubes or crushed ice
  • Some mint leaves

Preparation

  1. Dice the mango flesh and pour into two cocktail glasses. If you are using frozen mango, do not defrost it, cut it with a sharp knife directly and pour the cubes into the glasses.
  2. Add a few whole mint leaves and the sugar.
  3. Crush the mango, mint and sugar with a pestle (if you do not have one, use a large wooden spoon). Cover with with sparkling water.
  4. Add the lime juice, the white rum (or sparkling water) and ice cubes (optional if using frozen mango). Decorate with straws, lime slices, mint sprigs, as you wish and enjoy immediately!
