Lentil, Beef & Ginger Soup

Ingredients

  • 1 cup of Organic Brown Lentils
  • 2 tablespoons olive oil
  • 1 finely chopped onion
  • 3 carrots, peeled and cubed
  • 6 cups beef broth
  • 1 1/2 tablespoons grated ginger
  • 2 tablespoons beef concentrate
  • 1/4 cup finely chopped parsley
  • 3 cups water

Preparation

  1. Cook the lentils 30 minutes in 3 cups of water or until they are tender.
  2. Heat a cauldron and pour in the oil when it is hot. Brown the onion, carrots, celery and lentils for 5 minutes, taking care not to color them.
  3. Add the beef broth, ginger, beef concentrate. Simmer for 2 hours with a lid. Before serving, add the chopped parsley.
