Lentil, beef and ginger soup

Ingredients

  • 1 cup (250 ml) Organic Brown Lentils
  • 2 tablespoons (30 ml) olive oil
  • 1 onion, finely chopped
  • 3 carrots, peeled and diced
  • 6 cups (1.5 L) beef broth
  • 1 1/2 tablespoons (22.5 ml) grated ginger
  • 2 tablespoons (30 ml) beef concentrate
  • 1/4 cup (60 ml) parsley, finely chopped
  • 3 cups (750 ml) water

Preparation

  1. Cook the lentils 30 minutes in 3 cups (750 ml) of water or until they are tender.
  2. Heat a saucepan and add the oil when hot, then sauté the onion, carrots, celery, and lentils for 5 minutes, taking care not to brown them.
  3. Add the beef broth, ginger, beef concentrate. Simmer for 2 hours with a lid. Before serving, add the chopped parsley.
