Korean-style lentils

Ingredients

  • 1 1/2 cups (375 ml) Organic Red Lentils
  • 1/4 cup (60 ml) soya sauce
  • 1 tablespoon (15 ml) ginger
  • 1 red pepper
  • 1 red onion
  • 2 tablespoons (30 ml) brown sugar
  • Lime (to taste)
  • Basil (optional)

Preparation

  1. In a saucepan, heat a little olive oil over medium heat. Cook the ginger and onion for 2 to 3 minutes while stirring.
  2. Add 2 cups (500 ml) of water with soya sauce, lentils, diced peppers and brown sugar. Bring to a boil, then cover and simmer over low heat for 8 to 10 minutes, until the liquid is almost completely absorbed. Season with salt and pepper.
  3. Just before serving, garnish with lime and basil.
  4. Idea for accompaniment: vermicelli or rice.
