FOR THE FILLING:

  1. Preheat the oven to 350°F (180°C).
  2. Combine the potatoes, salmon, cheddar cheese, shallots, egg, thyme, and parsley. Season to taste.

FOR THE PIE CRUST:

  1. In a bowl, combine the flours and margarine or butter.
  2. Mix the salt and water in another small bowl. Pour over the dry mixture. Mix thoroughly without overworking the dough, then divide into two pieces.
  3. On a lightly floured surface, roll out two 12-inch (30 cm) rounds. Place in a 10-inch (25 cm) pie pan.
  4. Pour in the filling and cover with the second round of dough. Seal the sides and cut slits in the dough in a few places.
  5. Bake at 350°F (180°C) for 45 to 50 minutes.
