Fresh strawberry, ginger, and star anise lemonade

Ingredients

  • 1 cup (250 ml) Organic Golden Cane Sugar
  • 10 cups (2.5 L) water
  • 4 cups (1 L) strawberries from Quebec province
  • 1 1/2 inch (3 cm) grated ginger
  • 3 star anises
  • Ice cubes, as desired

Preparation

  1. Rinse the strawberries thoroughly.
  2. Cut the strawberries into pieces, and grate the ginger.
  3. In a saucepan, bring 2 cups (500 ml) of water, sugar, strawberries, ginger, and star anise to a boil.
  4. Simmer over medium-low heat for 7 minutes.
  5. Stir, and roughly crush the strawberries.
  6. Reserve, and let stand 5 minutes.
  7. In a fine sieve or cheesecloth placed over a pitcher, pour the hot mixture.
  8. In the pitcher, add 8 cups (4 L) of lukewarm water.
  9. Refrigerate for at least 2 hours.
  10. When ready to serve, fill glasses with ice cubes and pour in the lemonade.
