  1. Position the rack in the middle of the oven. Preheat the oven to 350°F (180°C). Line a cookie sheet with parchment paper.
  2. In a bowl, cream together the butter, sugar, and brown sugar. Add the flax seeds.
  3. In another bowl, whisk the eggs with the vanilla. Add to the flax mixture and stir.
  4. Sift the flour and baking soda. Add the oats, and stir into the first mixture.
  5. Form the dough into rolls about 1½ inches (4 cm) in diameter. Place in the freezer for about 1 hour.
  6. Slice the dough rolls into slices about 1¼ inches (3.5 cm) thick. Place on a cookie sheet.
  7. Bake for about 12 to 15 minutes, or until the edges of the cookies are golden brown. Let cool and serve!
