Express tex mex meal

Ingredients

  • 1 cup (250 ml) Organic White Quinoa
  • 1 cup (250 ml) organic adzuki beans
  • 1 package of smoked tofu or tex mex tofu, or smoked tempeh
  • 1 zucchini
  • 1 celery stalk
  • 1 avocado
  • 1 onion
  • 2 cups (500 ml) crushed tomatoes
  • 2 tablespoons (30 ml) tomato paste
  • 2 tablespoons (30 ml) paprika
  • A pinch of cayenne pepper
  • Salt and pepper

Preparation

  1. The day before, soak the organic adzuki beans in a bowl of water.
  2. The next day, drain, rinse the adzuki beans, and cook them.
  3. In a frying pan, sauté the chopped onion, smoked tofu (or tempeh) and diced zucchini.
  4. After 10 minutes, add the tomato paste, spices and azuki beans, and simmer for 5 minutes, stirring occasionally.
  5. Meanwhile, cook the quinoa in boiling water.
  6. Cut the avocado in half, remove the skin, arrange the plates with the avocado on top, and it's ready to eat!
