Crunchy banana, millet, and chocolate bread

Ingredients

  • 1½ cup (375 ml) Organic Whole Wheat Cookie Flour
  • 1/4 cup (60 ml) Organic Hulled Millet
  • 1 teaspoon (5 ml) baking powder
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) cinnamon
  • 3 very ripe, mashed bananas
  • 1 large egg
  • 1/3 cup (85 ml) olive oil
  • 1/3 cup (85 ml) brown sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (125 ml) dark chocolate, chopped

Preparation

  1. Place the rack in the middle of the oven. Preheat the oven to  350ºF (180ºC). Lightly grease a 9 x 5-inch (23 x 13-cm) loaf pan.
  2. In a bowl, combine the flour, millet, baking powder, salt and cinnamon. Set aside.
  3. In another bowl, mix the mashed bananas, egg, oil, brown sugar and vanilla extract.
  4. Combine the dry and wet ingredients alternately until you obtain a homogeneous consistency. Add the chocolate. Place the mixture in the loaf pan. Bake for 50 minutes to 1 hour, or until a toothpick inserted in the middle of the bread comes out clean..
  5. Allow to cool before unmoulding and slicing.
