Ingredients

  • 1 cup (250 ml) Organic Whole Oat Flour
  • 4 tablespoons (60 ml) Organic Golden Cane Sugar
  • 1/2 cup (125 ml) almond butter (or other nut butter, as desired)
  • 5 tablespoons (75 ml) plant-based drink or milk
  • 1 egg or ou chia egg (1 tablespoon (15 ml) chia seeds + 3 tablespoons (45 ml) water)
  • 1/3 cup (85 ml) apple sauce
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (250 ml) apples diced into small cubes
  • 1 teaspoon (5 ml) cinnamon
  • Crumble topping of your choice (brown sugar, oatmeal, margarine, and pecans)

Preparation

 

  1. Preheat the oven to 350°F (180°C), and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond butter, egg, plant-based drink (or milk), apple sauce, and golden cane sugar.
  3. Add the vanilla and flour, and mix well.
  4. In a small bowl, combine the apples and cinnamon.
  5. Form the cookies by placing the cinnamon apples in the middle of the dough. Add crumble topping.
  6. Bake for 10 minutes, then allow time to cool.
