Chickpeas General Tao

Ingredients

  • 540 ml  Organic Chickpeas (garbanzo)
  • 2 tablespoons (30 ml) olive oil
  • 1 red pepper, chopped
  • 1 broccoli head, cut into florets
  • 3 green onions, chopped
  • 1 tablespoon (15 ml) ginger, chopped
  • 3 tablespoons (45 ml) soya sauce
  • 3 tablespoons (45 ml) maple syrup
  • 3 tablespoons (45 ml) ketchup
  • 1 teaspoon (5 ml) Sriracha sauce
  • 1 cup (250 ml) vegetable broth
  • 1 tablespoon (15 ml) corn starch
  • 2 tablespoons (30 ml) water

Preparation

  1. In a frying pan, over high heat, stir-fry the vegetables, chickpeas and ginger in oil for 10 minutes.
  2. Add the soya sauce, maple syrup, ketchup, Sriracha sauce, and vegetable broth. Mix well, bring to a boil and continue cooking for 5 minutes.
  3. Mix the cornstarch and water in a small bowl, and stir into the mixture.
  4. Bring to a boil, stirring constantly.
  5. Serve with basmati rice.
