Ingredients

  • 3 cups (750 ml) Organic Spelt Flakes
  • 1/3 cup (85 ml) Organic Golden Cane Sugar
  • 1/2 cup (125 ml) Organic All Purpose Unbleached White Flour
  • 2 teaspoons (10 ml) baking powder
  • 1/4 teaspoon (1.25 ml) baking soda
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) cinnamon
  • 1/2 teaspoon (2.5 ml) nutmeg
  • 1/3 cup (85 ml) vegetable oil
  • 1/3 cup (85 ml) apple sauce
  • 1 egg
  • 1/4 cup (60 ml) milk
  • 2 teaspoons (10 ml) vanilla
  • 1 grated apple (Spartan, Cortland or Granny Smith)
  • 1/3 cup (85 ml) maple syrup

Preparation

  1. Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper or grease them.
  2. In a bowl, combine the maple syrup, oil, applesauce, vanilla, egg, and milk. In a separate bowl, combine the salt, cinnamon, nutmeg, baking powder, baking soda, flour, and spelt flakes. Mix until smooth. Add the grated apple and mix.
  3. Transfer the batter to the baking sheets and bake until golden brown, about 20 to 25 minutes. The cookies will keep for five days in an airtight container or up to three months in the freezer.
