Apple fritters with no milk, eggs, peanuts or nuts

Notes:

  • The Organic Unbleached White Red Fife Flour is a great flour for frying since it's low gluten, and it gives the perfect texture to batter. 
  • To vary the recipe, you can also use the Organic Unbleached White Spelt Flour.

Ingredients

  • 1 cup (250 ml) Organic Unbleached White Red Fife Flour
  • 1 1/4 cups (310 ml) Organic Golden Cane Sugar
  • 1/4 teaspoon (1.25 ml) salt
  • 1 teaspoon (5 ml) baking powder
  • 3/4 cup (180 ml) vegetable milk
  • 1 teaspoon (5 ml) vanilla
  • 2 larges apples
  • 2 tablespoons (30 ml) lemon juice
  • 1 tablespoon (15 ml) cinnamon
  • Vegetable oil (for frying)

Preparation

  1. In a small bag, combine 1 cup (250 ml) of cinnamon sugar and set aside. Peel the apples, remove the cores, and cut them into thick slices. Toss the apple slices in lemon juice to prevent them from browning.
  2. In a large bowl, combine the flour, the remaining sugar, baking powder, salt, vegetable milk, and vanilla, and mix well.
  3. Heat the oil in a large heavy-bottomed saucepan. The saucepan should be filled enough to cover half of the apples.
  4. Dip the apple slices in the mixture. Fry a small amount of slices at a time, turning them over once. The fritters are ready when the batter has turned golden brown and the apples are tender, about 3 to 4 minutes. Drain on a tray lined with paper towels. While the fritters are still hot, gently toss them in the cinnamon sugar.
