Apple and cinnamon fritters, made without eggs, milk, peanuts, or nuts

Notes:

  • Red Fife white flour is an excellent flour for frying; its low gluten level makes it perfect for batter and frying.

Ingredients

  • 1 cup (250 ml) Organic Unbleached White Red Fife Flour
  • 1 1/4 cup (310 ml) Organic Golden Cane Sugar
  • 1/4 teaspoon (1,25 ml) salt
  • 1 teaspoon (5 ml) baking powder
  • 3/4 cup (180 ml) vegetal drink
  • 1 teaspoon (5 ml) vanilla
  • 2 big apples
  • 2 tablespoon (30 ml) lemon juice
  • 1 tablespoon (15 ml) cinnamon
  • Vegetable oil (for cooking)

Preparation

 

  • In a small bag, combine 1 cup (250 ml) of cinnamon sugar, and set aside. Peel the apples, remove the cores, and cut them into thick slices. Toss the apple slices in lemon juice to prevent browning.
  • In a large bowl, combine the flour, remaining sugar, baking powder, salt, vegetal drink, and vanilla, and stir well.
  • In a large heavy-bottomed saucepan, heat the oil. The pan should be filled to cover half of the apples.
  • Dip the apple slices into the mixture. Fry a small quantity of slices at a time, turning them over once. The fritters are ready when the batter has turned golden brown and the apples are tender, about 3 to 4 minutes. Drain on a tray lined with paper towels. While the fritters are still hot, gently toss them in the cinnamon sugar.
