Organic whole einkorn flour is an excellent source of vegetable protein and contains all 8 essential amino acids. Einkorn is an ancient grain and one of the first cereals domesticated by man. Despite their similar names, einkorn is in no way related to spelt. Its grain is smaller than spelt and there is only one grain per spikelet.
Its low gluten content makes it interesting for people with gluten intolerance, not to be confused with celiac disease, because it does contain gluten!
For baking, it’s best combined with wheat flour, since it’s difficult to bake, but it’s perfect for pastries, both savory and sweet.
