Organic Whole Einkorn Flour is an excellent source of vegetal protein and contains eight essential amino acids. Einkorn is an old variety of wheat that was one of the first cereals domesticated by early humans. Despite their similar names, einkorn and spelt are not related. Its grain is smaller, and there is only one grain per spikelet.
Its low gluten content makes einkorn interesting for people with gluten intolerance—not to be confused with celiac disease—because einkorn does contain gluten.
It’s best used in combination with wheat flour for baking because it’s difficult to bake with on its owns, but it’s perfect for pastries, both savory and sweet.
