  • 2 tomatoes

  • 2 green onions

  • 1/2 cup of fresh mint

  • 1 cup of fresh parsley

  • The juice of a lemon

  • 1/2 cup of feta cheese

  • Sal and pepper

The recipe

  • Cook the quinoa according to the cooking instruction on the packaging.

  • Cut into small pieces the tomatoes, the green onions, the feta and the herbs. Mix with the quinoa, add the lemon juice, salt and pepper to taste.
