Oatmeal and apple sauce cookies

Notes:

  • Product used in this recipe : Organic Whole Wheat Pastry Flour
  • For a new taste, you can also use : Organic Whole Khorasan Flour

Ingredients

  • 1 1/4 cups of Organic Quick Oat Flakes
  • 1/2 cup of Organic Whole Wheat Pastry Flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 2 tablespoons canola or vegetable oil
  • 2 tablespoons maple syrup
  • 1/2 tablespoon Vanilla
  • 1/2 cup homemade or store-bought applesauce

Preparation

  1. Place the rack in the center of the oven and preheat to 180 degrees Celsius (350 degrees Fahrenheit). Line a baking sheet with parchment paper.
  2. In a bowl, combine oats, flour, baking powder, baking soda and cinnamon.
  3. In another bowl, beat the egg. Add remaining moist ingredients.
  4. Add the dry ingredients to the wet mixture, stirring until homogenized.
  5. Using a proportioning spoon, divide the dough into 10 patties, spacing them slightly apart. Leave in rounder balls or crush with fingers moistened with water for flat patties.
  6. Bake for 10 minutes or until lightly browned. Cool on baking sheet for 10 minutes before serving or cool completely before transferring to an airtight container.
