Mung Bean Soup

Ingredients

  • 250 ml (1 cup) of Fèves Mung biologiques

  • 15 ml (1 tablespoon) olive oil

  • 1 small chopped onion

  • 1 carrot, diced

  • 1 celery stalk, diced

  • 10 ml (2 teaspoons) of minced garlic

  • 15 ml (1 tablepoon) of chopped ginger

  • 1 liter (4 cups) of vegetable broth

  • 30 ml (2 tablespoons) of maple syrup

  • 10 ml (2 teaspoons)) of sriracha

  • Salt and pepper to taste

The recipe

  1. In a large saucepan, heat oil over medium heat. Cook onion, carrot and celery for 2 to 3 minutes.

  2. Add garlic and ginger. Cook 1 minute stirring.

  3. Add vegetable broth, mung beans, maple syrup and sriracha. Bring to a boil, then simmer for 45 minutes to 1 hour on low heat until the beans are tender. Salt and pepper.

  4. Transfer half of the soup to a bowl. Using the hand blender, blend 1 to 2 minutes.

  5. Put the soup back in the pan and stir.
