Lentils and Grilled Cheese (Halloumi) Salad

Notes:

  • Organic Green Lentils
  • For a new taste, you can also use : Organic Mung Beans

Ingredients

  • 300 g of Organic Green Lentils
  • 12 oz (340 ml) cherry tomatoes in different colors, cut in half
  • 1/2 cup (125 mL) chopped fresh coriander
  • 1/2 cup (125 mL) chopped fresh parsley
  • 200 g Halloumi cheese cut into 8 parts

VINAIGRETTE

  • 1/4 cup (65 mL) of olive oil
  • 1 1/2 teaspoon (8 ml) of sesame oil
  • 1 minced garlic clove
  • 1 minced French shallot
  • 1/2 (30 mL) freshly squeezed lemon juice
  • 1 tablespoon (30 ml) of honey
  • Salt and pepper

Preparation

  1. Rins and drain the lentils. Rinse and drain the lentils. In a large pot, bring the water to a boil and add the lentils. Cook for 20-25 minutes, until cooked but still slightly firm. Drain and rinse with cold water; drain well.
  2. In a salad bowl, whisk together all the ingredients of the vinaigrette.
  3. Add the lentils, cherry tomatoes, coriander and parsley to the salad bowl. Mix well.
  4. In nonstick skillet or on BBQ, cook cheese slices 2 to 3 minutes per side until golden brown.
  5. Spread salad on plates and garnish with grilled cheese.
