The recipe

  • Preheat fryer oil to 180°C (350°F). Line a baking sheet with paper towels or place a rack on it.

  • In a bowl, whisk together the flours, cornmeal, sugar, paprika, baking powder and salt. Stir in milk, butter and egg until creamy.

  • Insert a stick in the centre of each sausage, leaving about 4 cm (1 1/2 in) sticking out. Dip a few sausages at a time in the batter to coat them well. Fry 3 sausages at a time until golden brown, about 5 minutes. Watch for splatters. Drain on the baking sheet. Keep warm until ready to serve. Serve with mustard or ketchup.
