For a new taste, you can also use : Organic White Basmati Rice
Ingredients
1 cup of
Organic White Quinoa
1 cup of Organic Adzuki Beans
1 package of smoked tofu or Tex Mex tofu, or smoked Tempeh
1 zucchini
1 celery stalk
1 avocado
1 onion
2 cups of crushed tomatoes
2 tablespoons tomato paste
2 tablespoons of paprika
a pinch of cayenne pepper
Salt and pepper
Preparation
The day before, soak the organic adzuki beans in a bowl of water.
The next day, drain, rinse the adzuki beans and cook them.
In a frying pan, sauté the chopped onion, smoked tofu (or tempeh) and diced zucchini.
After 10 min, add the tomato sauce, spices and azuki beans and simmer for 5 min with occasional stirring.
Meanwhile, cook the quinoa in boiling water.
Cut the avocado in half, remove the skin, arrange the plates with the avocado on top and it's ready!
