Express tex mex

  • Product used in this recipe : Organic White Quinoa
  • For a new taste, you can also use : Organic White Basmati Rice

Ingredients

  • 1 cup of Organic White Quinoa
  • 1 cup of Organic Adzuki Beans
  • 1 package of smoked tofu or Tex Mex tofu, or smoked Tempeh
  • 1 zucchini
  • 1 celery stalk
  • 1 avocado
  • 1 onion
  • 2 cups of crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons of paprika
  • a pinch of cayenne pepper
  • Salt and pepper

Preparation

  1. The day before, soak the organic adzuki beans in a bowl of water.
  2. The next day, drain, rinse the adzuki beans and cook them.
  3. In a frying pan, sauté the chopped onion, smoked tofu (or tempeh) and diced zucchini.
  4. After 10 min, add the tomato sauce, spices and azuki beans and simmer for 5 min with occasional stirring.
  5. Meanwhile, cook the quinoa in boiling water.
  6. Cut the avocado in half, remove the skin, arrange the plates with the avocado on top and it's ready!
