Organic Flours
This whole flour is made from 100% organic einkorn. This Wild grain, commonly known as Einkorn was the first cereal to be used as food for humans. It is characterized by the richness and quality of its nutrients.
An excellent source of vegetable protein, it has 8 essential amino acids. Its low gluten content makes it an interesting alternative for people indisposed to wheat protein. However, this makes it difficult to bake bread, but great for pastry.
As pleasant in salty as in sweet version, it is recommended to cut organic whole einkorn flour with wheat flours (all-purpose, sifted or bread) to obtain a better result if you attempt to use it to make bread. Its more pronounced and distinctive taste than that of wheat develops aromas and flavours of hazelnut.
Warning!!! It is not recommended for people with Celiac disease because it contains gluten.
Einkorn has nothing in common with spelt except the name in french (épeautre and petit épeautre, translate spelt and little spelt), and the particularity of being a grain covered with a protective ball called the husk. You can recognize einkorn by its grain, which is smaller than spelt, and it is not split all at once like the latter.
Einkorn is one of the first cereals domesticated by man, nearly 10,000 years ago, on the Euphrates banks, between Turkey and Syria. He then travelled to Anatolia and went to Europe. Its cultivation diminished around the Middle Ages when cereals with a better yield in the fields and less complex to shell out made it fall against. We are therefore very proud to present to you this grain from another time.

The shelf life of organic whole flour is about 270 to 365 days. Store your flour in a hermetic container in a dark and cool place or in the freezer.
