Serve hulled barley instead of rice or potatoes. It is great in soup, stew and can use instead of rice in risotto.

In a pot, add 250 ml (1 cup) of hulled barley to 750 ml (3 cups) of cold water. Cover and bring to a boil. Reduce heat and simmer for 1½ hours or until the liquid is completely absorbed.
